It comes from 700 centenary and 9 millenary olive trees. Last units!
Varieties: 100 % Blanqueta Bio.
This is a family made oil and it comes from our own fields in Alicante, Spain, next to the Sierra Mariola Natural Park.
High intensity green fruity. Hints of banana, green almond and fresh herbs. Sweet oil with soft bitter and spicy notes.
It doesn’t contain any herbicides, pesticides, or insecticides. We only use fertilizers 100% organic and ecologic. Once again, it’s a costly choice, but we want to ensure the highest quality and, at the same time, we want to preserve the health of our consumers.
To achieve the organic production certification, the farms have had to go through a process that has lasted two years, during which the trees have not been exposed to any other product beyond water and sun.
The harvesting month is Ocober 2021 (beginning). Why? Well, November is the month when all olives reach a stage that we call “pre-envero”. That means that fruits are still green and they’ve just reached early mature stages. It’s a very costly choice because less olive juice is obtained. But it’s also the best way to ensure that our olive juice is of the highest quality. At the same time, it’s the only way to fully preserve the organoleptic and antioxidant properties of our product.
We use cold pressing procedures to bring one of the best olive oils in Spain. If we combine that with traditional harvesting methods, we believe that we can deliver truly wonderful and unique tastes.
