In order to understand why 9 Oliveres’ products have such extraordinary quality, one needs to understand the surrounding area as well. All the olives come from a family state called “La Xaquera,” which is located right at the heart of the “Sierra de Mariola” Natural Park in the north parts of Alicante.
Now, what’s so special about Sierra de Mariola? Well, many well-known botanists agree that this is the mountain area with the most aromatic and medicinal plants in the world. As such, it’s a perfect soil for high-quality olives as well. As a side info, we should add that Sierra de Mariola is located right next to another huge national park — Carrascal de la Font Roja.
The secret to each and every product lies in its production. The more comprehensive this process is, the better the product will be. 9 Oliveres uses all the latest technologies, and all products are made according to the latest industry standards.
Most of the production is done by using cold press techniques. In practice, that means that oils (and juices) are extracted by using a pure hydraulic press. This is a pure craftsman’s work, and it requires a lot of effort. But luckily, as 9 Oliveres relies on proven concepts from old traditions, as well as modern and sophisticated techniques, every single olive oil is produced quickly and efficiently.
The first question that we should all ask ourselves is — what determines the overall quality of one particular olive oil? In general, we can’t pinpoint one single factor that is crucial here, but we can certainly pinpoint a group of important factors. Geographical location is perhaps one of the most notable factors in that regard. This location has a term that everyone around the world commonly refers to as “terroir”.
Terroir’s most notable characteristics are the temperature of the mesoclimate, as well as humidity levels. However, wind intensity, soil composition, and the angle of sunlight are nothing less important either. All these factors together impact the fruit directly, and they improve its basic attributes quite a bit.
Safety is one factor that ultimately leads to a great product, but it’s not the only one. Production is yet another important factor, but even that’s not the whole answer. 9 Oliveres uses a combination of several different factors to ensure that every product is nothing short of superb.
We have olive trees with a long tradition. We have 700 centenary trees and 9 millenary trees, so we have a history at our side here. We also use rare olive types to produce our high-quality oils — Alfafarenca and Blanqueta. The entire production process is eco-friendly and doesn’t pollute the environment at all.
9 Oliveres’s olives grow in a truly special place — in a valley with two significant natural parks. One of them is Sierra de Mariola and the other is Carrascal de la Font Roja. The valley is close to the Mediterranean, and as such, it’s perfect soil for olive growth.
The truth is, if nature was willing to give us these benefits, then we should do our best to deliver the same quality to our customers. And we do so by ensuring that only the healthiest olives enter the production cycle. At the same time, we also have to gather our fruits at the right time.
It's in the maturity stage called "PRE ENVERO" when the olive juice has the best flavor and aroma. And we do this to the detriment of the amount of oil obtained, because is in this phase when you get the best quality oil but, at the same time, the least amount of it.
