Organic thyme honey made from the nectar of thyme flowers (Thymus vulgaris), a honey with an intense character and plenty of personality.

  • Origin: Sierra de Mariola (Alicante, Spain), in the heart of the Mediterranean scrubland. Harvested in late spring or early summer.
  • Colour: amber, ranging from light shades to darker tones with reddish glints.
  • Aroma: floral, intense and long-lasting, with a distinctive phenolic note.
  • Flavour: sweet, balanced by acidic notes that add complexity.
  • Texture: because it is pure and natural it may set or crystallise in the cold; this is a natural process.
  • Uses: its intensity makes it ideal with red meat, strong herbal teas and baking made with extra virgin olive oil.
  • Storage: Store at room temperature in a cool, dry place away from direct sunlight. If it crystallises, warm it gently in a bain-marie without exceeding 40 °C.
  • Format: 250 g jar.

TEAM 9 OLIVERES

9 Oliveres was born from the efforts of three young engineers with an entrepreneurial spirit and lovers of agriculture. They decide to recover their roots and try to live from what they like best: the countryside.
THE FARM

At the foot of the Benifloret farmhouse, in the countryside around Cocentaina, lies the terrace known as les 9 Oliveres. Its nine millenary olive trees are a symbol of the estate. The Carbonell family has cared for this terrace and the surrounding fields through four generations of farmers.
