    • 200 grams of dark chocolate

    • 100 grams of sugar
    • 200 ml of liquid cream
    • 1 tablespoon extra virgin olive oil
    • Optional: cocoa powder, whipped cream, or grated dark chocolate

Start by melting the dark chocolate in a bain-marie and set aside. Next, beat the egg whites until stiff and reserve.

Beat the sugar and egg yolks in another bowl until you get a foamy and homogeneous mixture. Add the liquid cream and the melted dark chocolate, and mix well. Gradually add the beaten egg whites until stiff, and mix with soft and enveloping movements so that the mousse is well aerated.
