Gazpacho Recipe with Extra Virgin Olive Oil

Ingredients

    • 6 ripe tomatoes, peeled and chopped
    • 1 cucumber, peeled and cut into pieces
    • 1 green pepper, cut into pieces
    • 1/2 red onion, chopped
    • 2 cloves garlic, minced
    • 1/4 cup red wine vinegar
    • 1/2 cup 9 Oliveres extra virgin olive oil
    • Salt and pepper to taste
    • Optional: stale bread (to accompany)

Elaboration

1. Preparation of ingredients:
To make the gazpacho, start by washing the tomatoes, cucumber and green pepper well. Then immerse the tomatoes in hot water for a few seconds and then peel them. Finish by peeling the cucumber and cutting all the vegetables into pieces to make cooking easier.

2. Mix:
Add all the ingredients (tomatoes, cucumber, pepper, onion, garlic, vinegar) to a blender and blend them until you obtain a smooth and homogeneous mixture (from which the "gazpacho" results).

3. Texture Adjustment:
If necessary, you can adjust the texture of the gazpacho by crushing more tomato. And if you prefer a thicker gazpacho, you can add stale bread to the mixture and beat again until you achieve the desired consistency.

4. Flavoring:
Add the 9 Oliveres extra virgin olive oil while the blender is running to emulsify the gazpacho and give it flavor. Finally, add salt and pepper to taste.

5. Cooling:
Refrigerate the gazpacho for at least 2 hours before serving. In this way, the flavors mix and the gazpacho reaches the perfect temperature to be enjoyed.

6. Presentation:
To finish this gazpacho, serve it in individual bowls or glasses. You can decorate the gazpacho with pieces of cucumber, pepper or an additional splash of 9 Oliveres extra virgin olive oil.
