What is an Oil Mill and How Does It Work?

What is an extra virgin olive oil mill?

Currently, an oil mill is the place where olives are processed to make extra virgin olive oil.

An oil mill, in addition to being an oil mill, is also a set of machinery and mechanical procedures that work together to obtain the highest quality extra virgin olive oil.


How does an oil mill work to produce extra virgin olive oil?

To obtain an exquisite extra virgin olive oil (EVOO), the procedure to follow is:

1. Reception of the Olives:
The first step is to harvest the olives and take them to the oil mill to begin the process of obtaining extra virgin olive oil.

It is important that the olives are of quality, since the quality of the oil will depend on this. Therefore, the olives must be carefully selected and brought as quickly as possible to the oil mill for the production of extra virgin olive oil.


2. Cleaning and Washing:
The second step is to put the olives through a cleaning process to eliminate impurities and residues. Here they are cleaned and washed so that they are ready to move on to the next phase of the oil mill.


3. Grinding:
The main core of the operation of the oil mill is based on the grinding of the olives. Here, the olives are crushed to release the pulp and extract the oil.

In the past, this process was carried out with large stones, but currently the most modern oil mills use more efficient mechanical presses.

4. Extraction:
Once the grinding is done, the resulting paste goes through an extraction process.

In the case of a traditional olive mill, the olive paste is pressed to separate the oil from the rest of the pulp. And if it is a more modern oil mill, it is possible that it uses hydraulic presses to extract the extra virgin olive oil more easily.

5. Decantation and Filtration:
Once the extra virgin olive oil has been extracted from the pulp of the olives, the next step in the oil mill is to decant said oil to eliminate impurities. In turn, it is filtered to obtain a clear and clean extra virgin olive oil.

6. Storage and Packaging:
When the extra virgin olive oil has been obtained, it is finally stored in the winery to preserve its freshness and flavor. To do this, oil mills usually have storage systems that control temperature and humidity, such as stainless steel tanks, to guarantee the quality of the final product.

And finally, the last step is to bottle the extra virgin olive oil. In this step, the oil is introduced into the containers. To preserve extra virgin olive oil well, it is important that these containers are opaque. In this way, oxidation of the oil is prevented and protected to guarantee its quality.
